COMPARATIVE ACTIVITIES OF PEPSINS AT AUTOMATIC PEPTOLYSIS IN RESPECT OF TRICHINELLA

Summary

The results of the diagnostic examination of cooled, defrosted and technologically preparedforce-meat in respect of Trichinella at devices for recovery of Trichinella larvae Gelmy and Gastros showed that pepsin manufactured by Akros, Sigma and Merck had the high digesting ability at dose level of 3-5 g/l and could be applied for automatized peptolysis. The efficacy outcome depended on enzymatic activity of applied pepsin and it’s dose and in less degree on species of muscle tissue sample.
